Hi everyone. Here is the full length video of my episode which aired around the world on RTP!
I hope you enjoy it as much as my family and I did. This was an experience of a lifetime for our family which we will never forget. It brought back sweet memories of Portugal, it connected us to our relatives and it inspired me to keep cooking Portuguese recipes to keep our beautiful traditions, culture and cuisine alive for the next generations.

Bizarre Foods | Lisbon

Andrew Zimmern traveled to Lisbon, Portugal for Travel Channels Bizarre Foods episode called;  Lisbon | Snails | Sardines | Barnacles which aired on Monday. He went diving for Percebes ( Barnacles ), visited a spectacular market with blogger Andrea Smith and visited Lisbon’s dining scene.

Portuguese in California Documentary

The Red Carpet World Premiere Gala of “Portuguese in California will take place in the San Francisco Bay Area. The bilingual series captures the full essence of the Portuguese contribution to the California of today. This Premiere is the first of multiple events in the state of California before aired on TV Worldwide.

The launch will be on 27th April and will be in San Jose and Gala Red Carpet will be in San Francisco. Will be released in other parts of California with some dates already announced on their Facebook Page.

This premier showcase of the Portuguese Diaspora experience in the rich history of the development of California offers the viewer a comprehensive historical overview of this unique and vibrant ethnic population. Joshua Greene, Wine & Spirits editor, unveiled his favorite Portuguese wines.

Today the 50 Great Portuguese wines were revealed at New York Public Library by Joshua Greene. The Portuguese wine’s quality and diversity enchanted the wine critic, who confessed being surprised with the Portuguese wine sector transformation during the last decade. To achieve a 50 Great list, Joshua Greene tasted 600 Portuguese wines and visited Portugal several times (fact that reignited his passion for Portugal).

Joshua Greene was the second wine personality chosen by ViniPortugal to select 50 Great Portuguese wines for the U.S., after the success of the 50 Great Wines by Doug Frost, Master of Wine and Master Sommelier, in 2013. Joshua Greene is a Portuguese wine connoisseur: he tastes Portuguese wines for over 25 years and visited the country many times.

ViniPortugal aims to approach Portuguese wines to U.S. wine consumers and opinion leaders with the 50 Great events, showing the quality of Portuguese wines available in this market.

June Festas in Portugal

The summer in Portugal is filled with traditional festivals through out the country but  June is the month for celebration of the favorite saints. Dia de Santo António – Saint Anthony’s Day is celebrated on June 13th. June 24th belongs to St. John and June 29th to St. Peter. Many Portuguese Immigrant communities around the world still follow these traditions and hold these festivals.

The streets are decorated with balloons and arches made out of brightly-colored paper; people dance in the city’s small squares, and altars, dedicated to the saints, are put up as a way of asking for good fortune.

In Lisbon; the Avenida da Liberdade, has a parade of costumed dancers who dance the street to musical songs called “Marchas”.
There is also dancing, while the highlight of the night is the firework display over the River Douro.

As well as being the patron saint of Lisbon, St. Anthony is also know in Portugal as the “matchmaker saint” and many single women pray to Saint Anthony to find them their mate.

“Santo António, Santo Antoninho, Arranja-me lá um maridinho…” (St. Anthony, my dear St. Anthony, find me a husband…) is one of the oldest and most popular chants in the city.

A flower pot of sweet basil and a love poem is offered as a token of admiration to a perspective suitor. It’s custom for the Lisbon town hall to organize multiple weddings (200 – 300) for lovers from modest backgrounds, which are held in Lisbon cathedral.

 
 

The traditional menu for the festival is;  Caldo Verde, Sardinha Assada (grilled sardines), bread and red wine.

Lisbon Fish & Flavours 2013

The biggest fish and seafood festival in Portugal will be held from 4th to 14th April, in Terreiro do Paço, Lisbon.

The sixth edition invites some of the most famous chefs, from Portugal and abroad, such as Fausto Airoldi, Virgilio Martinez, Bella Masano (Brazil), Bertílio Gomes, Adrien Trouilloud (France), Nuno Diniz, Nuno Barros, Mauro Uliassi (Italy), José Avillez, Alexandre Silva, Miguel Castro Silva, Tomoaki Kanazawa, Marlene Vieira, Vitor Sobral, among others. To present the best of the Portuguese sea, ten of the most reputed restaurants from Lisbon region – A Travessa, Assinatura, Can The Can, G-Spot, José Avillez, Peixaria da Esquina, Ribamar, Sea Me – Peixaria Moderna, Spazio Buondi / Nobre and Umai – will be open at the event, from 12:00 to 00:00, with fish and seafood tastings. And due to the last editions success, Lisbon Fish & Flavours will have 90 new seats available.

The official programme also presents show cookings with innovative gastronomic creations – always related to fish and seafood -, the contest “The best Pastel de Nata of Lisbon” – a tradition at Lisbon Fish & Flavours programme -, and the new parallel event “Young Chefs With Guts”, that intends to promote the “number 2” of top restaurants. The visitors will also have the opportunity to learn tips and tricks in cooking classes – more than 90, including some special sessions dedicated to children.

This year the Portuguese fruit were not forgotten: four live cooking presentations will be held in Silampos Auditorium related to the four seasons fruits. Bacalhau à Brás – Cod Fish and Egg Scramble

This video for the recipe of Bacalhau à Brás, (Cod Fish with Potato Sticks) by Michelin Star Chef Jose Avillez  is from Taste Portugal. The recipe for this dish is said to have originated hundreds of years ago in the Estremadura (meaning extremities), the coastline region of central Portugal known for its consistent wind and ocean waves. The Chef’s restaurant, Belcanto, Lisbon Portugal has been awarded a Michelin Star for 2013. Congratulations to the Chef!

This popular Euro windsurf and surf destination has great beaches which has hosted many surf championships including the IFCA wave championships.

It’s interesting to note that last month,  The Guinness World Records confirmed that Garrett McNamara broke the record for the biggest wave ever, a 78-foot wave (23,7 metres) in Nazaré, Portugal by riding the wave in November of 2011. Read the article in Surfer Today.

 

Estremadura, Nazaré historical coastal province of central Portugal that contains Lisbon and the Tagus River estuary.

The landforms of Estremadura are geologically younger than other parts of the Iberian Peninsula, containing sandstone, limestone, and volcanic rock instead of granite and schist. The peninsulas of Lisbon and Setúbal are divided by the lower Tagus River valley. Land use north of the Tagus is diverse. Vineyards, olive groves, and cereal plots are found on the hilly slopes, and the Cartaxo and Torres areas are known for their wines. South of the Tagus the landscape is less tamed; much is still unproductive or in extensive estates of cork oak forest. Along the Tagus valley, corn (maize), grapes, rice, and wheat are cultivated, and some of Portugal’s finest horses and fighting bulls—both used in Portuguese bullfights—are raised there. A bullfighting museum is near Sintra.

Known as the Portuguese Riviera, the coastal region west of the city of Lisbon has important resort centres, including Estoril, Cascais, and Sintra. Apart from Lisbon, other chief towns include Setúbal, the main sardine port, with canneries; Barreiro and Almada, suburbs of Lisbon; and the fishing towns of Peniche and Nazaré.

Now that I shared a little bit of Portugal’s geography with you let’s get back to the recipe for this centuries old, yet one of Portugal’s most popular dishes!

 Recipe:

Bacalhau à Brás

Ingredients:

4 oz of hydrated salt cod finely shredded

1 small potato cut into small match stick size

1 egg + 2 yolks

1/4 cup thinly sliced onion

1 clove garlic

2 bay leaves

1 tbsp chopped parsley

5 olives

Salt & Pepper to taste

2 tbsp olive oil

 

Preparation:

Fry the potato sticks in very hot oil and set aside. Saute onions Garlic and Bay leaf until translucent (about 2 minutes) in olive oil.

Stir the cod fish into the onions and cook for about 1 minute. Remove Bay Leaf. Add eggs on very low heat until cooked leaving a creamy texture.

Stir in the potato sticks and parsley.  Reserve a few sticks to use as garnish. 

Add salt and pepper to taste.  Garnish with olives and parsley. Enjoy!

Mariscada – Portuguese Seafood With Rice


Chef Luisa Fernandes sent me the following recipe to share with you.

Mariscada is an Atlantic Seafood inspiration based on rice and very popular along coastal Portugal.

The dish often has lobster, shrimp, clams, mussels, as well as cuttlefish and is seasoned with olive oil, sea salt, pepper and Portuguese paprika.

Chef Luisa is a very accomplished chef with an extensive resume. Currently she is the Executive Chef at Robert Restaurant. MOD Museum, NYC.

She has appeared on Chopped, The Food Network where she was crowned a Champion.

” I think that the victory is not mine, but all of ours, because I’m Portuguese and proud when people recognize our cuisine. That’s why I will never enter another contest unless I can cook the cuisine from our country” said Luisa, in an interview for ComunidadesUSA.

One year later, on September 14, 2010 she returned as one of the four contestants of Chopped Champions.

Mariscada - Portuguese Seafood With Rice

Mariscada is an Atlantic Seafood inspiration based on rice and very popular along coastal Portugal. The dish often has lobster, shrimp, clams, mussels, as well as cuttlefish and is seasoned with olive oil, sea salt, pepper and Portuguese paprika.
Ingredients
  • 3 ripe tomatoes
  • 2 cloves of minced garlic
  • 1 branch of Coriander leaves (finely chopped)
  • 2 sliced onions
  • ½ cup of oil
  • ½ cup of white wine
  • 1 chopped bell pepper
  • 8 clams – medium
  • 12 mussels
  • 4 squid (cut in pieces)
  • 2 lobster tails
  • 12 large shrimps with heads
  • juice of 1 lemon
  • salt, pepper, paprika
Instructions
  1. Put the olive oil in a saucepan and arrange the tomatoes, onions and peppers in layers.
  2. Add ½ of the chopped coriander, ½ cup of white wine , a little of Portuguese paprika and salt to taste.
  3. Cover the pan over medium heat until it starts to boil. At that time, add the clams and allow to cook for five minutes.
  4. Then add the lobster tails, shrimp and mussels. Increase heat slowly so that it does not retain a lot of liquid.
  5. Let the clams and mussels open and uncover the pan. Keep checking the heat for another 10 minutes or until everything is cooked.
  6. Add the other half of chopped coriander on top and the juice of a lemon. Serve with white rice.
  7. Note: Recipe was one of the dishes that Chef Luisa prepared for her casting at Chopped.
