Tia Maria’s Portuguese Style Meatloaf

My meatloaf comes out flavorful because I use my spice mix recipe found in my second cookbook or simply use the ingredients listed. I also use fresh bread crumbs in the meat mix which makes the loaf moist. I often double the recipe to make 2 meatloaves for sandwiched during the week.

Ingredients:

2 pounds ground beef or ground turkey

2 eggs

1 cup dried seasoned breadcrumbs

1 slice of fresh bread (crumbled, I use a grater)

1 medium onion (finely minced)

3/4 cup milk

2 tablespoons of my spice mix (order here on Lisbon Blue Etsy shop)

2 to 3 tablespoons minced parsley

1 cup ketchup

Preparation:

Mix all ingredients in a bowl. Shape into loaf and place in a baking dish. Top with ketchup. Cook at 350 degrees F for about 1 hour or longer until it reaches 170 degrees on a meat thermometer.

I like a well done crispy edge on my meatloaf but this is optional.

Crispy Bacon Wrapped Meatloaf Topped with Barbeque Sauce

Since Barbeque season has been delayed due to this cold weather my daughter made this bacon and barbeque sauce topped meatloaf this weekend to give us that summer barbeque taste. The bacon comes out crispy and the barbeque sauce’s sticky sweet flavor is amazing!

She also  made my Portuguese Style Potato Salad as a side for a real cook out theme!

By the way, it’s March 31st and it’s snowing and sleeting outside in New England! UGH!

Ingredients:

2 and 1/2 pounds of ground beef or turkey

1 small onion (minced)

3 eggs

2 slices of wheat bread

1 cup of milk

1 cup of seasoned  dry bread crumbs

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon Italian seasoning mix

2 tablespoons of ketchup

1/2 package of sliced bacon (about 10 slices)

Barbeque Sauce ingredients:

1/2 cup ketchup

1 tablespoon sugar

1/2 teaspoon of white vinegar

1 tablespoon of soy sauce

Instructions:

Dissolve the bread in the milk in a small bowl. Mix all of the remaining meatloaf ingredients in a medium bowl except the bacon and the barbeque sauce. Shape into a loaf and place on a broiling pan which let the meatloaf cook faster and achieve a crispy texture. You may also cook the meatloaf in a medium tray lined with foil for easy cleanup.

Cover the meatloaf with the bacon.

Prepare the sauce by mixing the ingredients in a small bowl until smooth and the sugar dissolves. Spread the sauce over the bacon.

Cook the meatloaf at 350 degrees for 1 hour and 10 minutes or until the meat reaches 165 degrees.

Remove from the oven and let it sit for about 5 minutes before slicing. Enjoy!

 

Onion Topped Turkey Meatloaf

 

There are many meatloaf recipes, but the secret to a moist meatloaf is using fresh bread crumbs in your mix and not over cooking it which tends to make it dry!

The onion and ketchup topping also gives the meatloaf a sweet taste and keeps it moist.

Since I began making this recipe with ground turkey, I have never used ground beef again but it’s up to you to use which one you prefer.

This recipe is easy and basic but my family can’t get enough of it!

No matter how much I make, I always regret not making more for the next day so I suggest you make 2 of these.

 

Ingredients:

2 pounds of ground turkey or beef

1 large finely diced onion

2 eggs

2 slices wheat bread (I use the ends)

3 tbsp ketchup

1 tsp salt

1/2 tsp pepper

1/2 tsp Italian Seasoning spice mix

1/2 tsp garlic powder

2 tbsp minced parsley

 

Topping:

1/2 cup ketchup

 

Instructions:

Dice the onion and divide into 2 parts reserving 1 part for the topping.

Shred the slices of bread with a cheese shredder or chop into fine crumbs.

Mix all the ingredients in a large bowl gently until all the ingredients are incorporated.

Form the loaf into your desired shape and place in a baking dish.

Top with ketchup and sprinkle the top with the diced onion.

Cook at 350 for about 1 hour and 15 minutes.

Remove from oven and let it sit for about 5 minutes before slicing.
