Chick Pea and Black Eyed Pea with Egg Salad

Ingredients:
2 cans of either chick peas or black eyed peas or combine both
4 to 6 boiled eggs (quartered)
1/4 to 1/2 cup olive oil
1/8 cup white wine vinegar
salt and pepper to taste
2 to 3 tablespoons chopped parsley (for garnish)
