Easy Sliders on Sweet Rolls

I made these slider using King’s Hawaiian Sweet Rolls. The bread tastes like my recipe; classic Portuguese Sweet Bread, so be warned that the rolls are delicious and you’ll eat the whole bag in one day! The bread has it’s beginnings in the 1950’s in Hilo, Hawaii where Robert Taira, the Hawaiian-born son of Japanese immigrants opened his first bakeshop.

Portuguese Sweet Bread is famous in Hawaii, visit this website Kona Historical Society where you’ll find the history of the Portuguese and the sweet bread in Hawaii. Maybe these King’s Hawaiian rolls were inspired by the Portuguese recipe.

 

The sliders were easy to make because instead of making small patties one by one, I simply formed the meat into meatballs and then flattened them with a spatula. They all come out perfectly shaped tiny sliders.

Sliders:

16 Hawaiian buns or Sliders buns

4 hamburgers

Toppings:

Cheese

Lettuce

Onion

Sliced Tomato

Ketchup

Sesame seeds

melted butter 

Cook burgers and cut into fourths. Top with cheese and turn off heat. Set aside and keep warm until ready to assemble sliders.

Crispy Bacon Wrapped Meatloaf Topped with Barbeque Sauce

Since Barbeque season has been delayed due to this cold weather my daughter made this bacon and barbeque sauce topped meatloaf this weekend to give us that summer barbeque taste. The bacon comes out crispy and the barbeque sauce’s sticky sweet flavor is amazing!

She also  made my Portuguese Style Potato Salad as a side for a real cook out theme!

By the way, it’s March 31st and it’s snowing and sleeting outside in New England! UGH!

Ingredients:

2 and 1/2 pounds of ground beef or turkey

1 small onion (minced)

3 eggs

2 slices of wheat bread

1 cup of milk

1 cup of seasoned  dry bread crumbs

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon Italian seasoning mix

2 tablespoons of ketchup

1/2 package of sliced bacon (about 10 slices)

Barbeque Sauce ingredients:

1/2 cup ketchup

1 tablespoon sugar

1/2 teaspoon of white vinegar

1 tablespoon of soy sauce

Instructions:

Dissolve the bread in the milk in a small bowl. Mix all of the remaining meatloaf ingredients in a medium bowl except the bacon and the barbeque sauce. Shape into a loaf and place on a broiling pan which let the meatloaf cook faster and achieve a crispy texture. You may also cook the meatloaf in a medium tray lined with foil for easy cleanup.

Cover the meatloaf with the bacon.

Prepare the sauce by mixing the ingredients in a small bowl until smooth and the sugar dissolves. Spread the sauce over the bacon.

Cook the meatloaf at 350 degrees for 1 hour and 10 minutes or until the meat reaches 165 degrees.

Remove from the oven and let it sit for about 5 minutes before slicing. Enjoy!

 

Easy Shepard’s Pie

Comforting Shepard’s Pie is one of my family’s favorite meals in the cold months of Winter. I love to make a big tray of it since usually I have enough leftover for another meal the next or the following day. I use ground turkey to save on calories but it’s up to you if you prefer ground beef. I serve the pie with easy buttermilk biscuits made with a simple buttermilk biscuit mix. Enjoy and stay warm!

Serves 6-8

Ingredients:

2 pounds of ground beef or turkey

1 package of frozen corn (or any of your favorite vegetables)

1 teaspoon of olive oil or margarine

1 small onion (chopped)

1/2 celery stalk (finely chopped)

1/2 teaspoon of garlic powder

1 cup of milk

2 tablespoons of flour

1 tablespoon butter or margarine

1 cup chicken stock

1 teaspoon of salt

pepper

 

Crumb topping:

1 egg

1/2 cup of shredded cheese

1/2 cup of Panko bread crumbs or regular bread crumbs

 

Mashed potatoes

2 pounds of potatoes (peeled and sliced)

1 teaspoon of salt

2 tablespoons of butter or margarine

1 cup of milk

pepper


 

Biscuits

Makes about 20 depending on size

4 cups of biscuit mix (or more)

1 and 1/2 cups of milk

 

Instructions:

Boil potatoes in salt, drain and mash with the butter and milk. Set aside until the meat filling is cooked.

In a medium saute pan, cook the onions and celery in the 1 teaspoon of olive oil for a few minutes.

Add the ground meat, salt, garlic powder, and pepper to taste. Cook until browned.

Add the corn, and cook on low heat for about 5 -8 minutes until the flavors have incorporated.

In a heavy small saucepan melt butter and mix in the flour. Add the milk and cook until slightly thickened for a few minutes.

Add the milk sauce and stock to the meat filling and cook for a few minutes. Add the parsley. Taste and add more salt and pepper to taste.

Pour the meat and corn into a large deep dish square casserole pan. Make the mashed potatoes, and spread them evenly on top of the meat filling.

Beat the egg slightly and brush over the potatoes. Mix the cheese with the panko bread crumbs and spread over the potatoes.

Cook at 350 for at least 30-45 minutes depending on how browned you like the pie. Let sit for a few minutes before serving. Top with fresh parsley for garnish.

Make biscuits by following these instructions:

Gently fold the ingredients in a bowl until they are almost incorporated. Note: The batter will be sticky, but mold-able. If you find it too sticky add more mix.

Do not over mix! The secret to light and fluffy biscuits is not to over mix!

Pour the batter into a floured surface. Flour your hands very well and roll the dough to 1/2 inch thick. Cut into round biscuit shape with a cookie cutter or a small cup.

Cook at 450 for about 8-10 minutes or until very light golden brown.

Check one by lifting the bottom. Note: Do not overcook. Take them out immediately so the bottoms to not overcook!

 

 

3 Bean Turkey Chili


This recipe makes a large pot of chili that can serve 10-12 people so you’ll have enough for the next day, or freeze it for next week!

For a vegetarian option, simply leave out the meat because it’s just as good.

Serve the chili with Blue Corn Tortilla Chips and my home made Corn Muffin recipe.

Ingredients:

2 lbs ground turkey or beef

1 large onion (finely chopped)

1 large red bell pepper (finely chopped)

1 large green pepper (finely chopped)

3 cloves garlic

2 tbsp of olive oil

1 tsp salt

1/2 tsp crushed black pepper

crushed red pepper flakes or hot sauce to taste

3 tablespoons chili powder

1/2  tsp paprika

1 small can crushed tomatoes

1 (32 ounce) can red kidney beans

1 (32 ounce) can black beans

1 (32 ounce) can pinto or any favorite beans

Or use any favorite beans

 

Garnish Options:

Shredded Mexican or your favorite cheese

Tortilla Chips

Sour cream

Chopped Avocado

Chopped onions

Cilantro

Salsa

 

Instructions:

In a large dutch oven or heavy pan, brown the meat in the olive oil. Remove the meat and add the onions, garlic and both peppers to the pan.

Cook the vegetables in the pan drippings until translucent. Add the meat back into the pan and stir well.

Add all of the remaining ingredients, stir well, and let the chili come to a slow boil on medium heat.

Continue cooking for about 30 minutes on low heat stirring very often so it does not stick.

If you like a thicker chili mash about 1 cup of the beans with the back of your stirring spoon. If you like it thin, leave as is or add a little more tomato or a cup of stock.

Store in refrigerator after it cools and freeze in food safe plastic containers.

 

 

Portuguese Style Roast Turkey Thanksgiving Menu

There are many variations to preparing at Thanksgiving Turkey. Some people brine the turkey for 48 hours while others simply rub the turkey with soft butter before baking.

I take this easy route. I marinate the turkey the day before Thanksgiving with basic Portuguese spices which enhance the turkey flavor but dot not overpower it.

Then I brush it with Olive oil, which will give the turkey a beautiful golden color when it’s cooked.

Ingredients:

2 -3 tablespoons of salt

1 lemon

1 large onion

1 large celery stalk

3 large sprigs of parsley

1 large carrot

1/4 cup of olive oil

1 tablespoon garlic powder

1 to 2 tablespoons paprika

2 tablespoon butter

1/2 cup vinho verde or any white wine

 

Steps to prepping your turkey

Step 1

Remove packaging. Remove the neck and giblets from both cavities of the turkey.

Step 2

Wash the turkey, the neck and giblets in very cold water.

Step 3

Rub the inside and outside of the turkey evenly with the salt.

Step 4

Slice the lemon in half and rub the inside and outside of the turkey with the lemon half squeezing the juice as you rub.

Place the used lemon halves inside the cavity.

Step 5

Place the butter underneath the chicken skin over the breast

Step 6

Sprinkle the paprika, pepper and garlic powder evenly over the chicken leaving a small amount to marinate the cavity.

Step 7

Place the neck and gizzards inside the turkey. Add the wine and remaining spices into the cavity to marinate.

Step 8

Place the celery, onion and carrot inside the cavity.

Step 9

Drizzle and rub the Olive oil over the Turkey.

Step 10

Place in the refrigerator overnight or up to 48 hours before cooking.

Step 11

Take the turkey out of the refrigerator at least 30 minutes before cooking.

 

*Remove the neck and gizzards from the cavity and save in the refrigerator until you are ready to make stock for my Portuguese Stuffing.

Cook the turkey with the remaining vegetables inside the cavity to add flavor.

My roaster is over 50 years old and it makes a perfect turkey every time!

Cook in Roasting pan, or cover with heavy aluminum foil. An average turkey of about 15 pounds will take about 3 hours to cook at 350.

My tips:

*Even if your timer pops up, it may not mean its fully cooked, test the turkey with a thermometer which reach 165 degrees.

*Marinate the turkey with the pan juices every hour.

*If you like your turkey skin dark colored remove the foil during the last 30 minutes.

*My simple test to see if the turkey is cooked, is this; Try to pull the thigh away from the body, if the thigh bone doesn’t break off easy, then continue to cook the turkey longer.

*Let the turkey sit at least 20 minutes before carving.

*Warm the turkey with a little bit of hot chicken or turkey broth.

** Do not discard the cooking juices. Simply strain it, let it sit for a few minutes, remove any excess grease from the top and cook it in a few tablespoons of flour for at least 5 minutes on low heat.

** Save the remaining gravy to make Turkey Pot Pie!

Onion Topped Turkey Meatloaf

 

There are many meatloaf recipes, but the secret to a moist meatloaf is using fresh bread crumbs in your mix and not over cooking it which tends to make it dry!

The onion and ketchup topping also gives the meatloaf a sweet taste and keeps it moist.

Since I began making this recipe with ground turkey, I have never used ground beef again but it’s up to you to use which one you prefer.

This recipe is easy and basic but my family can’t get enough of it!

No matter how much I make, I always regret not making more for the next day so I suggest you make 2 of these.

 

Ingredients:

2 pounds of ground turkey or beef

1 large finely diced onion

2 eggs

2 slices wheat bread (I use the ends)

3 tbsp ketchup

1 tsp salt

1/2 tsp pepper

1/2 tsp Italian Seasoning spice mix

1/2 tsp garlic powder

2 tbsp minced parsley

 

Topping:

1/2 cup ketchup

 

Instructions:

Dice the onion and divide into 2 parts reserving 1 part for the topping.

Shred the slices of bread with a cheese shredder or chop into fine crumbs.

Mix all the ingredients in a large bowl gently until all the ingredients are incorporated.

Form the loaf into your desired shape and place in a baking dish.

Top with ketchup and sprinkle the top with the diced onion.

Cook at 350 for about 1 hour and 15 minutes.

Remove from oven and let it sit for about 5 minutes before slicing.

 

 

Rose’s Stuffed Cabbage – Golumpki

It’s become a tradition of mine to make Polish Golumpki every September during the harvest season in New England.

Visiting the local farm stands you’ll find large cabbage heads selling at ridiculous low prices ranging from .99 cents to $1.49 each.

This recipe is adapted from my sister Rose’s recipe who got her recipe from her Polish Mother in Law!

Rose is the designated Golumpki maker for every family party and there is never enough!

Every time I make these I think of a nick name;  PortaPole (Being of Portuguese and Polish decent)!

I hope I have a pot big enough to cook this cabbage head that I bought at my local farmers market!

Stuffed Cabbage

Makes: 18- 20 rolls

Ingredients:

1 large head of cabbage

2 lbs of ground turkey or lean ground beef

1 large onion finely chopped

2 tbsp of olive oil

4 cups of cooked rice (room temp or cold)

1 stick of margarine

3 eggs

1 tsp of salt

1 tsp of pepper

1 chicken bouillon  cube

1 tsp garlic powder

1 Jar of marinara sauce or (* 1 can of Tomato soup)

1 cup of water

1 small onion sliced


Directions:

Heat oven to 350°. Core the end of the cabbage but keep it a whole head, and boil for about 10 minutes (or until leaves are soft) in a large pot of water.

Remove from the water, drain and let the cabbage cool on a large tray.

Saute the diced onion in a small skillet in the olive oil and 1/2 if the stick of margarine on medium-low heat.

Add the chicken bouillon cube do dissolve it and set the onion mixture aside to cool.

In a large bowl, combine the rice, eggs, ground meat, onion and spices and mix well to incorporate all the ingredients as you would a meatloaf.

Pull the leaves of the cabbage apart. *Slowly and try not to tear them. With a small carving knife, remove the thick rib part from the leaves.

Coat the bottom of a large deep dish baking pan or lasagna dish with 1/2 cup of the marinara sauce.

Fill each cabbage leaf with about 1/2 cup of equal portions, roll each leaf like a wrap and slowly place them in the baking pan.

Slice the remaining cabbage into shreds.

Saute the small sliced onion and the shredded cabbage in a skillet with a couple of tbsp of the margarine until the onion is translucent.

Pour the cooked onion and cabbage over the rolls filling in the sides and open spaces.

Add the 1 cup of water to the remaining marinara sauce and pour it over the cabbage rolls and into the sides.

Shake the pan to incorporate the sauce evenly.

Dot the top of the cabbage rolls with the remaining margarine.

Cover with foil and cook for 1 – 1/2 to 2 hours or longer until the cabbage is tender. *Test by piercing with a fork.

Remove from oven and let the rolls sit for at least 15 minutes before serving.

You can freeze the rolls covered in any type of tomato sauce in a plastic food safe container.

Defrost them overnight in refrigerator and heat in the oven or microwave.

Serve with Rye bread or Pao caseiro. Enjoy!

 

Skinny – Big Meatballs

Big……..A$$……I mean the meatballs of course!…This recipe’s name is a family – running joke every time I make them!

These meatballs are low in fat since they’re made with Turkey and a small amount of cheese instead of ground beef.

Sometimes cooking meatballs is a chore because they stick to the pan, burn, or are under cooked, but you’ll love this cooking technique.

They’re baked in your oven, not on the stove top, like the conventional way so they come out moist and juicy!

They’re perfect for a lazy Sunday, or a company diner because you can make them ahead of time, store them in the refrigerator and continue the cooking process one hour before your ready to serve your meal.

Ingredients:

Meatballs

  • 3 lbs ground Turkey
  • 3/4 cup Italian Bread Crumbs
  • 1 slice wheat bread (shred with a cheese shredder)
  • 3 eggs
  • 1 medium onion chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregeno
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 3 tbsp any tomato sauce
  • 1/4 cup shredded Pecorino cheese
  • 1/2 cup olive oil

RECIPE TIP: Never buy pre- shredded Parmesan or Pecorino cheese in the cans. Go to the cheese section at your grocery store and buy it by the whole chunk and keep it wrapped in your refrigerator. It’s much cheaper and much fresher because you can shred it as you need.

Sauce ingredients:

  • 2  28 oz cans of crushed tomatoes (preferably with basil or garlic)
  • 1 medium chopped onion
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp dried Oregano
  • 1 tsp dried Basil
  • 1/2 cup Shredded Parmesan cheese
  • 1/2 tsp sugar (optional)

Instructions:

Saute 1 onion in 1/4 cup of the Olive Oil until golden in a small skillet and set aside to cool. Meanwhile, place all the meatball ingredients in a large bowl.

I use a cheese crater to shred the slice of bread but you can dice it into very small cubes. (Using fresh bread crumbs makes the meatballs moister). Mix all ingredients until all incorporated but not too mushy. Form the meatballs using the insides of your palms to size between golf balls and baseballs.

Brown the meatballs in the remaining Olive Oil in large skillet until golden brown.

Place the meatballs in a large deep dish baking pan. Add all of the sauce ingredients except the cheese to the meatball pan. Stir the sauce to mix all the ingredients well. Top the meatballs with the cheese.

Cover with foil leaving a small opening for steam to escape and let them cook at 350 degrees for 45-60 minutes depending on the size of the meatballs. *Note: After 30 minutes remove from oven and stir the sauce well.

Return to oven and let cook for another 15-30 minutes. *Note: Take one meatball out of the oven after 45 minutes and check to see if it’s cooked through. Let them rest in the pan for about 5-10 minutes so the sauce thickens.

P.S. They’re even better the next day so make a double batch!

 

Stove Top Turkey Pot Pie With Dumplings

Don’t through away those leftovers! “Turkey or Chicken Pot Pie” is a family favorite.

This comforting classic is easy to make and I guarantee it will be gone before you know.

Ingredients:

Filling:

Leftover Turkey (4-6 cups or amount desired) cut into cubes

1/2 cup chopped onion

1/2 cup chopped celery

1 cup cooked carrots

1 cup cooked peas

2 cups leftover gravy

Leftover – cooked potatoes or any vegetables chopped into small cubes (if desired)

salt

pepper

1/2 – 1 cup milk or cream

1 tbsp  Olive oil or Margarine

 

Dumplings:

3 cups Bisquick or other biscuit mix

1/2 tsp garlic powder

1 tsp chopped parsley

1/2 tsp paprika

1 tbsp melted margarine

1 1/2 cups milk

1 cup shredded cheddar cheese (or any you prefer)

 

Instructions:

In a very large oven proof skillet or dutch oven, saute onions and celery in oil until tender.

Add all ingredients (except Dumpling ingredients) and cook on low – med for about 10-15 minutes.

Reduce to low, taste and add seasonings if desired. Add more gravy to thicken if needed.

Meanwhile, make the Dumplings by mixing all ingredients in a large bowl. This should look like a very thick pancake dough.

With a large spoon that measures 1/4 – 1/2 cup, drop the dough into the cooked turkey mixture in even amounts that cover the pan.

Add any leftover stuffing if desired in between the dumplings. Cook the dumplings in the pan for about 10 minutes.

The dough will sink into the gravy but it will double in size as it cooks.


Shake the pan gently so the gravy doesn’t stick but don’t break up the dumplings. You’ll notice the dumplings will cook from bottom up.

After 10 minutes, place the pan in the oven on Broil. Leave the oven door slightly open and let the dumplings get golden brown.

Take the pan out of the oven and lift one dumpling to see if it’s cooked through.

If you see the dough is still raw, cook the pot pie on stove top at medium heat for a few more minutes, or in the oven at 400 degrees until the dumpling is fully cooked. Serve with any leftover sides such as the stuffing or vegetables! This will keep in Refrigerator for 2 days. Heat up in oven or microwave.

Portuguese Style – Thanksgiving Stuffing

I get many requests from people looking for lost recipes, but especially around the Holidays.

There are many reasons why people don’t have their family recipes.

Some family members didn’t want to share them, the recipes were not written down, or they just hadn’t taken the time to learn the recipe until it was too late.

This Thanksgiving, I encourage you to sit down with the cooks in your family, write down their recipes and share the family traditions and history!

In this post, I’m sharing a little of my own family history along with my family’s favorite Thanksgiving recipe which I only cook once a year!

My family came to America in 1963, when John F. Kennedy was President of the United States. We came here, thanks to my Aunt Isabel, my mother’s sister, who immigrated to America when she was only 16 years old.

She sailed here by ship and passed through the historical landmark of Ellis Island in New York. She eventually became a US Citizen and later filed the paperwork for my mother and her family to immigrate!

My parents were typical Portuguese immigrants, who idolized President Kennedy because he was a proponent of Immigration, which eventually led to the Immigration Act of 1965.

This act, allowed my two older brothers who were living in Brazil at that time to join our family in the USA a few short years after we arrived here.

A soft velvety tapestry of JFK hung on the walls of most Portuguese family living rooms those days. I still have the one my parents had, neatly stored away in my cedar chest as a reminder of our family’s journey of coming to America.

President Kennedy was assassinated only 6 months later and like so many of others, I remember exactly where I was the moment I heard about it. I cried but I don’t think I knew why it affected me so much. Perhaps it was because my mother was crying.

Like so many before them my parents grew to love America and they were happy and grateful to move here. They followed the dream of a better life for their family, opportunity, and freedom from living in a country ruled by Salazar who was the dictator at that time.

I remember my first day in America, but that story is for another day and another recipe.

Like most Portuguese immigrants in America, my family has embraced the tradition of celebrating Thanksgiving since we were very grateful for the blessings of the food, our health, friends, and family.

I was very young when I watched my mother prepare our family’s first Thanksgiving diner, but I remember it vividly.

A friend of hers came by the night before Thanksgiving to teach her how to brine the turkey, and to make the stuffing.

I didn’t understand why they had to drown the poor bald turkey in a big plastic tub filled with salt, water and lemons since it was already dead anyway!

I watched in horror as they prepared the stuffing by peeling the sagging skin hanging off the turkey neck and then chopping up the cooked heart and the liver! Yuk!. I said to myself, I would never make that stuffing for my family, but of course I did.

Despite hating what I saw, I couldn’t leave that kitchen because I wanted to see, what this Thanksgiving cooking fuss was about anyway?

Many years later, I began preparing my mother’s stuffing recipe for my own family and it’s become the favorite side dish on our Thanksgiving table every year!

*Note that every family has a special Thanksgiving stuffing recipe. Some use meats in their stuffing, while some add chourica to the bread mix. I also use Pepperidge farm stuffing mix for an authentic Thanksgiving flavor. I suggest you try this recipe a couple of times to perfect to your taste by substituting your favorite meats, or bread stuffing mix. You can order chourica online at Gaspars Linguica.

Portuguese Style – Thanksgiving Stuffing with Giblets – Serves 12 +

Ingredients:

Giblets & Stock

Turkey Giblets (which come inside turkey – neck, liver, heart, gizzard)

1 medium onion (chopped)

1 celery stock (chopped)

4 cups of water

4 cups of chicken broth

2 cloves of garlic

1 tsp of salt

1 tsp of pepper

Ground Meat & Bread Stuffing

1 lb ground beef, ground turkey, or sausage meat (this is optional)

1/2  cup diced Chourica or Linguica sausage (this is optional)

1/2 tsp garlic powder

1/2 tsp Paprika (omit if you use chourica)

1/2 tsp salt

1/2 tsp pepper

1 small diced onion

3 tbsp of olive oil

3 or 4 day old Portuguese rolls cut into cubes

4 cups of Pepperidge Farms stuffing mix with herbs (optional but use more bread instead and add 1/2 teaspoon of sage)

2 eggs

2 tsp very finely chopped parsley

 

Preparation:

How to cook giblets and stock:

Step 1:

Place the water, onion, garlic, celery, stock, and seasonings in a large stock pan and bring to a boil.

Rinse the giblets and neck and place them (except the liver) into the pan.
Cover, and cook on medium heat for at least 1 hour.

*Add liver during the last 10 minutes of cooking.

*The giblets should very well cooked, let cook longer if needed.

Remove the giblets from pan but save the stock. When giblets and neck are cooled, trim the meat by removing any ten-dints, veins or skin.

Place the trimmed meat in a food processor and pulse until they are the consistency of ground meat or leave chunky if you prefer.

Meatstuffing

Step 2

*Prepare meat for stuffing

Saute ground meat in olive oil with onions and seasonings until cooked. Add the diced Chourica the meat and mix.

Place in a food processor and pulse about 5 times until you get a smooth like consistency – (or chunky if you prefer

Step3:

Strain your giblet turkey broth into a large bowl. Add the Portuguese rolls.

Let the rolls absorb the broth until they are soft. Add the cooked onion, garlic and celery from the broth. Mash well with your hand or a potato masher.

Add stuffing mix, ground meat mixture, and giblets. Mix until well incorporated.

At this point it’s up to you, if like a wet stuffing leave it alone, if you like a dry stuffing, add more stuffing mix or bread. If you find the stuffing dry add more broth.

Taste the stuffing and add salt or seasonings to your taste.

Add 2 eggs, and parsley. Mix well.

Spray or grease with margarine, a souffle, or baking pan which is at least 4 inches deep and big enough to hold all of the stuffing

Pour in the stuffing and cover with foil. Cook for at least 45 minutes at 350. If you want a crispy top remove foil during the last 15 minutes.

* Important – If you make this the day before. Let it cool – cover and store in refrigerator. (Heat up in the oven for 20-30 minutes at 350 F oven, or one portion at at time in the microwave.)
