Portuguese Chourico Bread with Ham, Peppers and Onions

Are you drooling yet? My family went crazy when I made this bread and it disappeared the same day! I barely had a chance to take the photo of the finished bread for this post.

Making this bread is simple and you can substitute any meats you have on hand. Feel free to use more varieties of meats. I had a few slices of salami, so I added them. I used store bought fresh pizza dough from the market but you can follow the recipe below and make your own.

I suggest you make 2 and save one for the next day. It’s also a perfect treat to bring along for your next party this Holiday Season! 🙂

Ingredients:

1 + 1/2 pound of store bought pizza dough or make your own (recipe below)

1 small chourico or linguica sausage (cut into thin slices)

3 or 4  slices of ham (cut into strips)

3 slices of salami (optional, cut into strips)

1 medium onion (sliced)

1 medium red pepper (sliced)

1 cup of shredded cheese

1 tablespoon plus 1 teaspoon olive oil

1 tablespoon of coarse corn meal

Pizza Dough

3 1/2 cups of flour

1 teaspoon sugar

1 envelope instant dry yeast

2 teaspoons salt
 
1 1/2 cups warm water

2 tablespoons olive oil

In a medium bowl mix the dry ingredients. Add the water and oil and mix until a ball forms. It you find the dough too sticky add more flour. Grease a large bowl with olive oil and add the dough rolling it to coat with the oil. Cover with plastic wrap, cover with a warm towel, and place in a warm place for about 1 hour until the dough doubles in size.

Preparation:

Preheat oven to 425 degrees F.

Saute the onions and peppers for a few minutes in 1 tablespoon olive oil until translucent and set aside to cool

Roll out the dough into a large rectangle. Add a layer of onions followed by a layer of meat.

Top with cheese.

Begin gently rolling the dough evenly.

Sprinkle the corn meal on a large sheet pan or pizza pan. Place the bread on pan. Brush with a little olive oil.

Cook for 20 minutes or until the bread is golden and crispy.

Let cook slightly before cutting. Take a bite and start drooling! Enjoy!

Crustless Ham with Broccoli Quiche

This crust-less quiche is easy to prepare in only 45 minutes. I make this quiche very often as a side dish when I serve fish or chicken.  It also makes a perfect lunch, snack, or serve it as dinner with a salad.

Make it a vegetarian quiche by substituting the ham with your favorite cooked vegetables.

Ingredients:

1 cup chopped ham (optional substitute with any cooked vegetables)

1 cup shredded cheddar cheese

1 pound package frozen broccoli spears or fresh (cooked and chopped)

1 small ripe tomato (chopped) (optional)

1/2 small onion (finely chopped)

1 tablespoon olive oil or butter

1 and 1/2 cups half and half (1/2 cream – 1/2 milk)

5 eggs

Pinch of Salt (add pinch more if you omit the ham)

Dash of fresh ground black pepper

1/4 teaspoon garlic powder

 

Preparation:

Saute the onion in the oil for a few minutes until the onion is translucent.

Beat eggs until foamy in a medium bowl. Add the milk, salt, pepper, and garlic powder to the eggs and mix to incorporate. Add the broccoli, ham, onion, and 1/2 of the cheese. Mix all ingredients.

Heavily grease a deep souffle dish with margarine. Pour the broccoli mixture into the dish and spread evenly. Top with the remaining cheese. Cook at 350 degrees for about 30 minutes until golden brown.

You many need to cook longer if your souffle dish is deep. Cut into the center of the quiche it should be firm and not runny. Enjoy!

Pasta & Ham Salad Primavera

 

What can you do with all that left over ham? Make Pasta & Ham Salad Primavera. Cut up the ham into 1/4 inch strips and freeze in food safe freezer bags. The ham will be ready for adding to your summer recipes.

Ingredients:

1 16 oz package bow tie pasta (or any you prefer)

1 cup or more cooked ham (cut into 1/4 inch long strips)

2 cups frozen petite peas

1/2 cooked roasted red pepper (finely diced)

1 slice red onion (finely minced)

2 ounces cheddar cheese (chopped into small pieces) (optional)

3 tablespoons mayonnaise

1/2 teaspoon of Italian seasoning mix

Fresh crushed black pepper

1 squirt lemon juice

Instructions:

Cook the pasta as per package directions. Turn off heat, 5 minutes before the pasta is cooked add the ham, peas, and peppers and let simmer for a few minutes. The peas are very tender so they’ll cook with the heat from the pasta.

Drain the pasta in colander and place in a large bowl.

 Add the remaining ingredients and toss gently.

Taste and add more pepper or seasoning if desired. Place in the refrigerator to cool. Serve and enjoy!

Pineapple Glazed Ham

This recipe for Pineapple Glaced Ham is easy. Don’t buy those expensive fancy hams because this ham recipe is just as delicious, and juicy.

All you need is a regular shank ham or a butt portion ham that you’ll find on sale in your supermarket. Some hams come spiral cut for you.

You’ll only need one can of Pineapple slices and 1/2 cup of brown sugar.  In the photo, I added 1 cup of dried cranberries for my Christmas Ham but this is optional.

Make my Portuguese Style Sweet Potatoes as a side dish. 

Instructions:

Wash the ham, cut off any excess fat and place it in a baking pan that has been lined with foil for easy clean up. Add 2 cups of water to the pan.

The water will help draw out the salt from ham while keeping it moist while baking!

Heat oven to 325. Loosely cover the ham with aluminum foil and place it in the oven. Let the ham cook for 20 minutes per pound or more depending on the size of your ham.

*Note: If you have spiral ham cook as per package directions since it will take less time to cook.

Strain the pineapples into a small bowl but save the juice. In a small pan heat the sugar and the pineapple juice at medium heat until the sugar has dissolved and slightly thickened.

During the last 30 minutes before the ham is cooked, remove the pan from the oven and  drain the water out of the pan. Pour 1/2 of the glaze over the ham.

Top with the pineapple slices. Pour the glaze over the ham and pineapple slices. Cook for the remaining 30 minutes.

Place the ham on a large serving platter and pour any leftover glaze over it. Arrange dried fruits and fresh fruit around the serving platter for a festive presentation that will wow your guests!

This ham can be served hot or cold and perfect for your holiday parties.
