Sopa Juliana – Portuguese Cabbage Soup

 

It’s soup season! Let the soup making begin with this classic hearty soup that’s delicious and good for you.

This soup is low calorie, packed with vitamin C, A, and K, loaded with fiber for digestion,  and it has antioxidants to boost your immune system!

Ingredients:

4 cups of Savoy or Regular Cabbage sliced into 1/2 inch strips

2 pork ribs 

2 large potatoes

4 carrots

8 cups of water

1/2 cup of rice, orzo, or any small pasta (optional)

1 large onion

1 clove garlic

1 chicken bouillon cube

3 tbsp Olive oil

1 tsp salt

1 tsp pepper

Crushed red pepper flakes (optional)

Instructions:

In a large soup pan filled with the water, add pork, the carrots, potatoes, onions, garlic, chicken cube, salt, and 1 cup of the cabbage. Let it come to a boil  and cook on medium for 30 minutes.

When vegetables are cooked, puree the soup with an immersion blender to your desired consistency.

Add the remaining cabbage, rice or pasta, and olive oil and cook for an additional 30 minutes on medium heat.

You may add more water if you find the soup has thickened too much.

Add fresh cracked pepper and crushed red pepper if desired before serving.
